This is not a course that teaches you recipes. It is a programme that builds a complete pastry professional – someone who understands the science behind every technique, can execute under commercial kitchen pressure, and has the business knowledge to build something of their own.

French Patisserie & Classical Techniques

Tarts, choux pastry, éclairs, mille-feuille, Paris-Brest, financiers, and the foundational French technique that underpins all of modern pastry. You will learn not just the methods but the precision, the plating standards, and the kitchen discipline of a professional French-trained pastry chef.

Advanced Cake Design & Decoration

Layered cake construction, flavour pairing theory, buttercream finishes, fondant and sugar art, sculpted cake techniques, and luxury wedding cake design. From birthday cakes to multi-tiered showpieces - built to professional brief and commercial standards.

Chocolate & Confectionery

Chocolate tempering, ganache construction, bonbon and truffle making, chocolate decorations, and plated dessert finishing. You will work with both couverture and compound chocolate and understand the science of crystallisation and texture.

Eggless Baking Specialisation

India's most thorough eggless pastry module - eggless cakes, breads, laminated doughs, tarts, mousses, and entremets. Built into the core curriculum, not added as an afterthought. CHO Bee Labs is the only institute in Mumbai where eggless technique is taught to the same professional standard as conventional pastry.

Artisan Bread & Viennoiserie

Sourdough, baguettes, focaccia, brioche, and laminated viennoiserie - croissants, pain au chocolat, and Danish pastry. Fermentation science, shaping technique, proofing and baking principles across different oven types.

Entremets & Modern Patisserie

Mirror glaze construction, mousse engineering, insert layers, joconde sponge, dacquoise, and the full architecture of a modern entremet. You will build competition-standard desserts from Day 1 of this module.

Plated Desserts & Restaurant Pastry

Sauce work, tuile construction, quenelles, temperature contrast, texture layering, and the full language of a fine dining pastry plate. Designed to prepare students for five-star hotel and restaurant pastry roles.

Bakery Business & Entrepreneurship

Pricing strategy, product costing, menu development, packaging, bakery setup fundamentals, and customer acquisition. Every diploma student leaves with the business knowledge to either enter a professional kitchen or launch their own venture.
